Das vorliegende Projekt wurde geplant, um den Vitamin-A-Mangel bei schwangeren und stillenden Frauen durch die Bereitstellung von mit Vitamin A angereicherten Keksen zu beheben. Zu diesem Zweck wurden Kekse hergestellt, indem zwei Vitamin-A-Anreicherungen, d. h. Retinylacetat und Retinylpalmitat, separat mit 30, 40 und 50 % der RDA f r schwangere (750 g) und stillende (1200 g) Frauen zugesetzt wurden. W hrend der Lagerungsstudien stiegen der Feuchtigkeitsgehalt und die TBA-Zahl der Kekse von 2,51 auf 2,84% bzw. von 0,40 auf 0,69mg Maleindehyd/Kg. Die Vitamin-A-Verluste w hrend des Backens und der Lagerung reichten von 7,95 bis 15,79 % bzw. 8,02 bis 9,69 % unter den Behandlungen. Auf der Grundlage der physikalisch-chemischen Analyse, der Back- und Lagerstabilit t und der sensorischen Eigenschaften wurden T4 (50 % der RDA; Retinylacetat) und T7 (50 % der RDA; Retinylpalmitat) f r die Wirksamkeit ausgew hlt. Die ausgew hlten Behandlungen (f nf Kekse; 50 g pro Tag) wurden zusammen mit einem Placebo den jeweiligen Gruppen von schwangeren Frauen mit Vitamin-A-Mangel im dritten Trimester verabreicht.
