Florence Fabricant—celebrated New York Times food writer for more than 50 years—recounts a life defined by the insatiable search for new dining experiences, tracing the evolution of food and restaurant culture in the United States and abroad, and her instrumental role in revealing it, along the way. What is it like to have a front-row seat to the evolution of dining and restaurant culture—in the United States and abroad—for half a century? Few can answer that question, but Florence Fabricant, the beloved and influential food writer for the New York Times, is one who can. And in Salty, Not Sweet, for the first time, she shares her insider's view of the food world and how she came to inhabit it. From early, palate defining food experiences in New York City, and later in France during a formative year abroad, to the dining rooms, kitchens, markets, and wineries that have redefined what it means to eat today, Fabricant paints a vivid picture of a life in the food world. Her earliest experiences, of pickle barrels in the Bronx and pre-theater dinners with her parents, laid the foundation for a life and unexpected career that would span the globe while always finding a home and heartbeat within the dining scene of New York. Beginning at the East Hampton Star before landing at the Times, Fabricant established herself as an endlessly curious diner and reporter, one whose keen sense led her to early coverage of food world titans like Thomas Keller, Martha Stewart, Eric Ripert, Alain Ducasse, Tom Colicchio, and many, many more. Her characteristic prose and sharp wit, familiar to readers of the New York Times for decades, shine through in this exploration of the rise of farm to table cooking, the cult of celebrity chefs, the growth of restaurant groups, the role of the critic, and the evolving way we cook and eat. Throughout, Fabricant gives readers a peek behind the curtain of her own singular tastes and preferences, as well as her wide-ranging travels, experiences with some of the food world’s brightest stars and bold-faced names, the ever-evolving landscape of food in New York, and her own extraordinary life and partnership with her husband of more than 60 years, Richard Fabricant. An accomplished cook, she punctuates each chapter with a relevant recipe. This recounting of a singular life and career will speak to readers in love with food, New York, and the alchemy of a truly great dining experience, beautifully recounted by someone with a palate developed over decades of precise and enthusiastic eating and reportage.

The personal journey of a designer and scientist through the field of fiber-polymer composites. Composites in Structural Engineering and Architecture is about the author’s twenty-five-year journey as a pioneer, scientist, designer, and lecturer in the field of fiber-polymer composites as applied to structural engineering and architecture. Composites are construction materials that offer unique properties when compared to conventional materials such as reinforced concrete or steel. In addition to their excellent mechanical properties, their physical properties— including low thermal conductivity, transparency, and color—allow structural building physics and architectural functions to be integrated into individual features of buildings. This merging of functions in buildings, in addition to the modular and hybrid composite construction of bridges, gives rise to novel and compelling solutions regarding structural safety, serviceability, aesthetics, economy, and sustainability. Alongside these opportunities, however, composites may also reveal limitations in their structural application, which can be caused by their anisotropy or viscoelasticity, or in terms of ductility, fatigue, fire resistance, and durability. The monograph first addresses these limitations from a scientific point of view and then demonstrates how they can be overcome through suitable structural and architectural design. Subsequently, it is shown how the opportunities can be explored and the current design space expanded, to allow composites to develop to their full potential in structural engineering and architecture.

This is open access book is a critical review of existing of knowledge fiber-polymer composites, complemented by an original cutting-edge analysis. Fiber-polymer composites are construction materials that offer unique properties to structural engineering and architecture if compared to traditional structural materials, e.g., reinforced concrete or steel. In addition to excellent mechanical properties, physical properties—such as low thermal conductivity, transparency, and color—they allow structural, building physics and architectural functions to be integrated into individual construction elements, thus fulfilling requirements regarding structural safety, energy efficiency, aesthetics, economy, and sustainability at the same time. Complex architectural forms and function integration can be realized in building construction or rapid replacements of deteriorated bridges to reduce the social costs due to traffic congestion. Together with such opportunities, however, composites may also exhibit limitations in their structural application, which can be caused by their anisotropy or viscoelasticity, or in terms of ductility, fatigue and fire resistance, and durability. Such limitations and opportunities of composites are discussed in the book, and it is demonstrated how limitations can be overcome and the opprtunties explored. The book is of great interest to researchers and students in the applied materials sciences as well as structural engineers and architects.

Named a Best Book of 2020 by Publisher's Weekly Named a Best Cookbook of 2020 by Amazon and Barnes & Noble “Every elegant page projects Keller’s high standard of ‘perfect culinary execution’. . . . This superb work is as much philosophical treatise as gorgeous cookbook.”—Publishers Weekly, STARRED REVIEW Bound by a common philosophy, linked by live video, staffed by a cadre of inventive and skilled chefs, the kitchens of Thomas Keller’s celebrated restaurants—The French Laundry in Yountville, California, and per se, in New York City—are in a relationship unique in the world of fine dining. Ideas bounce back and forth in a dance of creativity, knowledge, innovation, and excellence. It’s a relationship that’s the very embodiment of collaboration, and of the whole being greater than the sum of its parts. And all of it is captured in The French Laundry, Per Se, with meticulously detailed recipes for 70 beloved dishes, including Smoked Sturgeon Rillettes on an Everything Bagel, “The Whole Bird,” Tomato Consommé, Celery Root Pastrami, Steak and Potatoes, Peaches ’n’ Cream. Just reading these recipes is a master class in the state of the art of cooking today. We learn to use a dehydrator to intensify the flavor and texture of fruits and vegetables. To make the crunchiest coating with a cornstarch–egg white paste and potato flakes. To limit waste in the kitchen by fermenting vegetable trimmings for sauces with an unexpected depth of flavor. And that essential Keller trait, to take a classic and reinvent it: like the French onion soup, with a mushroom essence stock and garnish of braised beef cheeks and Comté mousse, or a classic crème brûlée reimagined as a rich, creamy ice cream with a crispy sugar tuile to mimic the caramelized coating. Throughout, there are 40 recipes for the basics to elevate our home cooking. Some are old standbys, like the best versions of beurre manié and béchamel, others more unusual, including a ramen broth (aka the Super Stock) and a Blue-Ribbon Pickle. And with its notes on technique, stories about farmers and purveyors, and revelatory essays from Thomas Keller—“The Lessons of a Dishwasher,” “Inspiration Versus Influence,” “Patience and Persistence”—The French Laundry, Per Se will change how young chefs, determined home cooks, and dedicated food lovers understand and approach their cooking.

The Arab-Israeli Conflict: A Historical Perspective

The Arab-Israeli Conflict: A Historical Perspective

The Palestinian-Israeli Conflict - A Historical PerspectiveThe initial intent of this thesis was to explore the historiography of the Palestinian-Israeli conflict and identify the key issues in the debate. The primary intent of this thesis was to evaluate the strategic security related risks the State of Israel must take in order to maintain the status quo of military occupation in the Israeli controlled territories of the West Bank, Gaza Strip and Golan Heights. The research was conducted, generally, by rigorously exploring as much primary evidence as possible. This included, but was not limited to, published interviews, published studies, and government documents. The research was conducted, specifically, to provide a representative sampling of research from both Israeli and Arab historians. The research revealed that the Palestinian intifada, or "uprising," directly affected the Israeli government's political and military planning, strategically and tactically, in the occupied territories. The Israeli government now seems committed to a political settlement with the Palestinian people represented by the Palestinian Liberation Organization; therefore, the security related risks to the State Israel, strategically and tactically, posed by a newly created Palestinian State are few compared to maintaining the status quo of Israeli military occupation in the West Bank, Gaza Strip, and Golan Heights.
